Well I just brewed the second brew. I was aiming for a stout but it looks more like a dark brown. Still good mind you:) I put 6 oz of Chocolate slowly over the lat 15 minutes of the boil. Cascade for 45 min, then Tetternag for the lat 15 min of the boil then added Saaz for last 5 min.. total boil time was 60 min (over the 45 min for the steep). The only thing that is bugging me is I forgot to set the strainer down over the funnel. So all of the leftover hops is now floating. Do you think this is a problem?

5.5 Pound Light DME
1/2 Pound BPM
1/2 Pound Crystal
1 Pound Flaked Oat
1 Pound Lactose
6 Oz Chocolate

Steeped in bag for about 45 minutes. "Sparged" with 1 pint.

Do you mean the hops from the boil are now floating in the fermenter?

If so, it isn't really a problem. They will settle out by the time the beer has fermented. I guess you may end up with a bit of a stronger hop flavour than if you had strained them, but you certainly won't have any problems...

Yup. Thats whats going on. Initial taste was hoppy. You could taste the Chocolate too. Was nice but rough. Needs to cook:) Started bubbling this morning when I got up.
