I have brewed three five gallon batches so far and so far all have turned out great. I am doing partial mashes because of the time factor and equipment involved with a full mash. I am using 16 oz fliptop bottles for bottling.
The first was an Alaskan Amber Clone, I tried it after two weeks in the bottle but it did not have much carbonation, talked to the local beer store and they told me to wait another week and try again. Patients is a bitch, but I did and what a difference!! Excellent taste good carbonation, wasn't very clear when refrigerated (chill haze) but who cares how clear the beer is if it tastes great! I did notice that it did not keep the head for long?
The second batch was a Samuel Adams Clone. This time I waited three weeks in the bottle before sampling, had great carbonation and great flavor. This beer kept the head for longer than the previous batch I brewed. It is what I am currently drinking.
The third batch is a Dunkel Weizen that is now working on two weeks in the bottle, I used the yeast cake from the previous batch on this one. I read about it here on the forum and thought I would give it a try. Tasted pretty good when I took the Hydrometer reading just before bottling.
I will brew my fourth batch, a Blue Moon Clone next week, this hobby is addicting!! I love the fact that I am no longer buying any Microwbrew from the grocery store, I am making what I normally buy, and it tastes great
so far anyway!!
I have learned a few great tips here, and found a few future recipies to try. I think this is a great site for rookies and veteran brewers. Thanks!
