Hello all
Back from my vacation. I had put my Irish red ale wort in the fridge before leaving for 2.5 weeks vacation. Should I bring the temp of the wort back up to room temp before I bottle it's 5 gallons in a 6.5 glass Carboy ?

If it is complete, which I hope it is since you chilled it, you can bottle it cold with no problem. Just be sure to leave the bottles at room temp until carbonation is complete (at least 3 weeks), before chilling again.

When I read that I got scared - thinking you made your wort- and tossed it in the fridge and went on vacation - and are coming home to pitch the yeast and make some beer...


then I re- read it ... got more confused- and looked it up-

Technically speaking, you had beer in your fridge all along- and the worts of the world are safe.. :)

I mean whats the worts that can happen?
