Been working on a RIS recipe, let me know what you think. I want a complex mild roasty chocolately, dark fruits full body stout. Thanks

Sparge: Fly sparge with 2.06 gal water at 168.0 F
 
This worked great! its a 10 gallon batch at 73% mash efficiency and 82% brewhouse efficiency. We mashed at 152. I think 158 is to high. We hit it with a ton of yeast and it was a crazy fermentation, so make sure you have head space+++. Really Great body and nice flavors. A buddy and I brewed 15 gallons and stuck it in a barrel for three months. I'm actually going to brew another batch this weekend so its ready for cold weather and football.

First thought: ....how big is your mash tun?

Second thought: I don't think it's at all realistic to expect 80% efficiency with that pre-boil volume and that much grain.

Third thought: what ABV are you shooting for here? And what is the listed tolerance of WLP002?

This looks like the Kate the Great clone. I was thinking of doing that as well.

That looks like the Kate the great clone. I was thinking about trying that.

Third thought: what ABV are you shooting for here? And what is the listed tolerance of WLP002?

I have a 3 vessel eherms. Mash tun is a sanke keg. I am not sure why beer smith automatically calculates estimated efficiency. ABV I am targeting is around 10%

That's a TON of roast in your original recipe. I would consider backing down your roasted malts a bit and maybe adding some more 80-120 crystal malts. Are you wanting milk chocolate flavor or more bitter chocolate.
