Hi there. I am planning on bottling a Russian Imperial Stout that I've had aging since June of 2011. Since I'm almost certain there's no viable yeast left, I was planning on making a yeast starter today and combining that and priming sugar with the stout when I bottle it. I figured that would work well to carbonate the bottles. Any issues you guys see with that process? Thanks ahead of time for your input!
