I noticed my regulator sputtering occasionally, the gauge kind of shivers back and forth too. Is this dangerous? Will it be okay for a keg or two?
 
Sputtering suggests that the needle valve has some debris/deposit on it that is causing it to momentarily stick. Regulators are very simple machines. Take it off the gas cylinder and open up the front cover to expose the spring, diaphragm, and needle valve. There is probably something on the needle or the seat. Clean it out and reassemble.

Google it and you'll see that there isn't much to disassembly and reassembly.
