Question for the masses... I am a huge Red Trolley Ale fan. I'm looking for something [very, hopefully] close in all grain. First, some assumptions...

I am not a hop head whatsoever. IMO hops should balance out the malt and give some character and aroma based on the style, not rot your gut and coat your teeth for the next two weeks. IPA's in their older form are great (Goose Island, etc) but some of these IPA's appearing at microbreweries are pushing toward beer flavored turpentine.

The ingredients, IBU's, and SRM listed on the Red Trolley website site obviously are not all inclusive or accurate. They may be total BS so people don't clone their recipe.

The infamous Raging Red (mega threads here and other forums) looks really tasty, without the additional ABV via honey and possibly with MO or other malt rather than generic 2 row. I'll probably do a batch of that too.

Taste is subjective and everyone is different. I'm just looking for some comparisons from those that have tasted both :)

It seams to me that Red Trolley may be mashed at the >= 154 range with a yeast that is a bit more complex than a WLP001 type. It's REALLY malty and borderline sweet. I just don't have the trained and experienced pallet to guestimate.
