Hello All!

I was going to make a Belgian Wit this Thursday but when I went to my LHBS they unfortunately ran out of Flaked Wheat, but the person working said I could just crush some White Wheat as a substitute.

Unfortunately I guess I miscalculated my weight and put 7lbs of White Wheat instead of 6lbs, and now my BeerSmith Style Guide is somewhat off. I guess the main concern I'm trying to fix is my Est. OG and ABV - while I don't care if my beer is a few points higher, I'm basing this recipe off of a recipe that matched the style guide perfectly.

My questions are: Should I even care at this point? Do you think my miscalculations will affect flavor much? And if I were to try and match the style guide a little more, would you suggest a 60 min mash instead of the recommended 90 min mash or maybe a shorter boil?

If you did not make a cereal mash with that white wheat before mash, I do not think it will have any effect on beer. I dropped the flour of white wheat directly into the mash and did not feel in the beer.
 
No need to do a cereal mash with white wheat. It is a malted grain that gets mashed along with the other grains.

And to answer your question: I don't think there will be much difference in taste, but it may have a slightly thinner mouthfeel.
 
I don't think you'll notice much difference, you'll probably find your efficiency is a bit lower than normal with that much wheat anyway. It could be quite sticky - maybe get some rice hulls in there to prevent a stuck sparge.

For next time, most health food stores stock flaked wheat and it's normally cheaper than homebrew stores.
