Looking to brew this weekend using what I have on hand. Also want to use Voss for a quick turn around. Best I came up with is: 6.25 lbs Maris Otter (all I have), 4 lb 2-row (have plenty). For hops: 1oz Columbus at 60 minutes, 1oz Columbus at 15, 2 oz Galena at 0 minutes. Ferment with the Voss at 80° . Any help/comments will be appreciated. That'll leave on hand I have Pilsner malt, and hops I have: Magnum (1oz); Hallertau Mittelfruh (2oz) and Styrain Golding (1oz). Thanks for reading... Flame away!!
 
Nothing wrong with using both Maris Otter and 2-row (of any brand). When I run this through Beersmith it estimates an OG around 1.053. With those hops I get an IBU nearing 75. If you took out the 15 minute addition it falls to just under 50 IBU. How you adjust your hop schedule I guess depends on what you are trying to achieve and what you like to drink. You have plenty on hand to work with and I think you are on solid footing to make a tasty beer.
 
Thanks for the input. My first attempt at making a recipe except for one Smash I did awhile back. I've been all over the map coming up with this one.
 
Looks fine to me, should be tasty.

I think Voss does better at 90°+ if u can heat it more... Cleaner ferment and more finished. I also like to give it at least 10-12 days and not rush. Great beer takes time to ferment and condition.
 
Maris Otter is a two-row barley malt. It's a specific English variety of two-row barley that is prized for its use in traditional British ales. Crisp Malt even has a dedicated "Story of Maris Otter" page on their website.

I have used Maris Otter (various maltsters) split 50/50 with US 2-Row (1.9L or so, various maltsters usually Rahr). The combination is fine and some use it to reduce costs of Maris Otter since Rahr US 2-Row can be had around $1/lb. You will get great conversion from US 2-Row, but lightens up the malt bill.

What is the style of beer you are shooting for?
I am assuming its a 5 gallon batch.

I personally do not like Columbus or Galena for flavor or aroma additions, but if you do, that is great.

Yes, a 5 gallon batch. With what I have on hand I figure a pale/blonde is my best option, and that's fine by me. It's something both the wife and I can drink. As far as the hops, that too a matter of using what I have on hand. I listened them in the initial post. If you can offer another plan I'm all ears. Thanks

If you have made SMaSH beers and want to take another step look into Drew Beechum's technique called "Brewing On The Ones". In short; start with your SMaSH and then add one of each ingredient... one extra malt... and one other hop. There is probably more to it so I'll post a link to Drew's video...
 
Just a note, there is a general recipe forum for asking for advice. This is supposed to be for tried and true recipes 😁
 
Columbus/CTZ is actually not a bad character hop if used in moderation considering its characteristically high AA%. I've also dabbled with late Galena - in small amounts as it can be hella potent...
