Recipe for 1gal of Grape Mead ?

You could keep in very basic:
2lbs of honey
Enough no preservative grape juice to make a gallon
A packet of the yeast of your choice (prepared to directions)
You could use white grape juice and lighter honey for a white wine-like pyment or dark honey plus darker grape juice for more red wine-style. I'm not sure about nutrients, because from what I understand, grape juice is very yeast friendly.

You could do Joe's Quick Grape Mead. It's drinkable after one month and very good. Easy to brew as well.
