So basically my question is what is the difference between ultra light ,light, medium, and dark dry exstract flavor wise? Or is the only real differance the color? Completely new to brewing and only have 1 kit exstract brew under my belt. So sorry for a real simple newb question. Thanks in advance the RedHeaded Devil.

The more colour in a dry extract, the less fermentable it is. The darker colour mean that more carmel malts or colouring agents were used to make the DME, so it may mean a more sweetness will be noticable.
