I just kegged a kolsch and am force carbing. I decided on setting to regulator to 30psi for 24 hours and then 10-12 psi (and purge tomorrow). I have read a tons of posts and the attached charts (time/temp/psi) are no longer available? does this sound about right. I know many set and forget it at desired psi but I was hoping to have it carbed for festivities this saturday (5 days).

Also I am new to kegging and am wondering what psi most serve at? I have 9 feet of 3/16th beverage line and keg is at about 37F

...also beer was conditioned for a month prior to kegging...(would have kegged earlier but was out of CO2)

Sounds OK to me...although I typically go for 48 hrs at 30 PSI. Let down to 10-12 PSI after your 24 hrs and pull a sample...if it's not bubbly enough, crank'er back up and leave for 12 hours, then back down to 10-12 and check again...rinse and repeat.

You want to serve at whatever your carbonation pressure is at. So, in your case, 10-12 PSI. 9' of line should do you fine at those temps as long as the line is as cold as the beer, (37F in your case)

Shut off gas to keg. Turn down reg to 10-12 PSI. Vent keg. Turn gas back on to keg. Pour sample.

Even with a small headspace, (call it 0.5 gallons), you'd need to pour 1 gallon of beer to reduce pressure from 30 PSI to 10 PSI. If you wanna call 1 gallon a "sample", then go for it. Otherwise vent first, then pour.
