I was thinking of adding lime to a Cream Ale recipie that i am already going to add peppers to. I was thinnking it might be like a Mexican Food Beer?
When should I add the lime. Boil off? Secondary? Would it taste to wierd with the Peppers?

Sounds interesting.. i would add lime at the VERY end of the proces. Like after cold crashing or maybe crush some lime peels and put them in a hops bag. One thing that would be interesting would be to do a light ale (without any additional hops) and then add a bunch of clamato, salt and hot pepper.

Use the zest only, not the whole peel. Put the zest of a few limes in a hop bag, put the bag in a jar, pressed to the bottom. Then cover with vodka and let it sit for a few days. Add the lime zest (still in the bag) and the vodka to your beer after fermentation is complete for a few days to a week before bottling. It's as if you were dry hopping with the lime zest.
