So I made my first batch and it turned out great. When I got my cider I had an extra gallon so I pitched some Belgian strong ale yeast and let it go. Things got busy and I left it in the gallon for about a month and it turned nice and clear. Yesterday I decided I wanted to add some black cherry to it to give it a different taste. So I racked to another gallon jug with the concentrate in it. My question is did I wait too long and are there still yeast in there to eat some of those sugars? Should i add more sugar now? I used this as the black cherry as well.
I mist likely will sweeten it as well as it is very dry. It was at 1.000 before I racked it over.

I think you'll be fine on the yeast.

Also, I was wondering if that black cherry concentrate is a really tart flavor?

It is tart but if you ever had the cherry it is not as tart as that one.
