I used this recipe: 19 lbs honey, 4.5 gals water, 1.5 packets Lavlin EC-1116 yeast, 5 tsp Fermax nutrient, to arrive at 6 gals of must at a CG of 1.115. Last year this recipe started percolating within hours. It's 12 hours and there's some foam but no gases yet. What is the average time to get the fermentation going?
 
The way to confirm fermentation is if your gravity is dropping. If its the same. Make a starter. Arpolis has a good post I think on it.... don't quote me on the last sentence.
