Can I use a different yeast strain on this kit from Northern Brewer if I don't want to make it a sour beer?http://www.northernbrewer.com/shop/oud-bruin-de-table-extract-kit.html If so what would work? Thanks for any input. I may go ahead and brew as is........ I did not realize this beer needed such a long age before I bought it. I should have done some more reading before purchase.

You can always swap yeasts. You'd get a different beer, but go for it. Another Belgian yeast might be the safest bet. But you can use any yeast you'd use for a brown ale, or even try a lager yeast I suppose. Maybe something wouldn't work (Hefe yeast? Irish stout yeast?), but I think most would give you something good.

EDIT: don't try a lager yeast unless you are doing lager temps.

Thanks McGarnigle. I thought it was possible to swap yeast. I just wanted to make sure before and..... IF I did.
