So I brewed a partial mash Festale from Austin Home brew a few weeks ago.

http://www.austinhomebrew.com/Beer/Amber-Ales/AHS-Spiced-Festale-10B.html#.VEf1PvnF_1Y

After 10 days of primary fermentation I threw it in the fridge with some Super KC. After another 5 days I kegged and pressurized at 7 psi at 30 degrees.

10 days later I tasted it and it tastes malty and slightly sweet, but it has NO hop flavor (I know it's not supposed to have much, but it has NONE) and it tastes watery as all hell. I would have a hard time passing this off as a "light" fall beer. I'm thinking about trying to make a correction for body and taste by boiling some maltodexrin with some hops, straining the hops and mixing that into the degassed keg. Any thoughts?

PS. I'm pretty certain the Super KC is why the flavor is so week and there is no body. If you are going to use Super KC, you need to use it after the beer has bulk aged a good number of days/weeks...i think.

Several questions:
1- ten days in primary isn't very long. Did you check your SG several days in a row to make sure your fermentation was complete?
2- how did your SG compare w/ what was expected based on the kit info?
3- what yeast did you use?
4- how did your post boil volume compare w/ expected volume? Did you add any water post boil?

Did you take gravity readings? What is Super KC? It sounds like it didn't finish fermenting. Also, what is the carbonation level supposed to be? 7 psi at 30 degrees seems very low. Under carbed beer can certainly taste bland and fail to accentuate hop bitterness.

SGs were spot on, both starting and finish. Fermented with 5.25 gallons total volume as indicated on the kit and ended with about 5 after racking and leavng crap behind. Super KC is chistosan and keisol. It's a finning agent. It's was carbbes to 10 psi at 30 and was a bit over carbed so I backed it down. Been 2 weeks since it kegged and over a month since fermentation finished. I wouldn't anticipate it to be bland by now. I'm not concerned with what caused it....I'm fairly certain it was the super KC, I'm looking for possible corrective action: adding maltodextein and boiled hop water.
