my dear wife loves sweet low ABV wine, very sweet. And I will have LOTS of muscdines this year. So here is the idea:
Make 2 gal must with a potential ABV of 12%
Hit with Campden
pull about 1/2 gal from must and reserve in freezer
Ferment remaining to dry, then add back reserved must
Hit with Campden again, then bottle
Should leave her with a sweet wine, about 8 0r 9%
any comments?
