I have an idea kicking around for a pineapple saison with sorachi ace hops. Any ideas? Undecided if I should add the pineapple to the boil or something, as a secondary...
 
dont add it to the boil. Definitely add it to a fermentor if you want any sort of actual pineapple flavor. They make puree in big 33oz cans that you could find at most homebrew stores if you are looking for the most practical option

As for the hops, sorachi ace is predominantly lemon, then herbal dill and spice flavors. Ive used it in spiced saisons and in black saisons, but it would be far from my choice for something like a pineapple saison. I'd go for any hops which have "pineapple" in the description like kohatu
 
I've never used sorachi ace, but what I was looking for was sort of the lemon-y flavor to go with the pineapple - maybe that sounds better in my head than it would be in real life. Using something like kohatu or galaxy would be easier, possibly...
 
easiest and cheapest way is to add crushed canned pineapple to secondary. I've had great success doing it this way with a 60 minute addition of golding. I have mix fermentation saison in the fermenter that I will be dry hopping with Citra
