All,
Grain Bill:
7 lbs Pilsener
1 lb. Munich
1 lb. Carapils
2 lb. Crystal 60L

Hops:
1 oz. Pearle (60 mins.)
.5 oz. Saaz (30 mins.)
.5 oz. Saaz (5 mins.)

Wyeast American Ale 2

Will this yeast ferment those grains (particularly the Pilsener) since it is an Ale yeast at 67 degree mark. Will it taste ok?:drunk:

It will be fine. Grain does not a lager make.

You'll want to boil for at least 90 minutes though, to avoid off flavors from the pils malt (which will be my standard answer for today!)

I think you are getting Pilsner (the style) confused with Pilsner (the malt). The yeast cannot tell what kind of malt you used they only see the sugar.

Yes, that yeast will work just fine. But, what are you looking for? That is A LOT of crystal malt, way more that I would ever put in 5 gallons.

You may consider using some maris otter for part of the base of your pumpkin beer. I'm trying it this year...I heard from a local microbrew that maris was the way to go. Just a suggestion.

I've always wondered this. Will this favor more of a pilsner style beer, or a american ale, or some kind've perfectly split pilsner ale hybrid?
