partial bottling?

In a brewery, the beer is kept in large tanks then pulled to fillers for bottling. It might take week or more until the large tank is emptied but as long as no oxygen isn't introduced to the beer it will stay as fresh as the first day. Has anyone bottled a portion of beer from a secondary to see how it tastes before bottling the rest? If carbonation tabs are used, I could see this being helpful in doctoring a beer. Could dry hop longer or add extracts. Thanks.

you'd have to purge the head space with Co2 to keep nasties from getting the air they need to take over. I imagine they do...
