My beer has been fermenting for 48 hours and it appears to be going down (sorry not good lingo). It's more soupy looking now rather then being raised. Is this bad or normal?
 
You don't have to at all. But if you want to wait until all activity has stopped for a few of days. Usually 5-10 days after starting. Take a gravity reading then skip a day and take another. If they are the same you can transfer. The easier way is to just leave it in primary for 2 - 4 weeks, check the gravity then bottle.
