Ok a few points:

Galvanizing that gets heated releases Zinc, zinc fumes are toxic, DO NOT HEAT GALVANIZED IN AN ENCLOSED SPACE, DO NOT BREATH THE FUMES.

Go ahead and paint any areas that wont get hot enough to burn off with any paint for a metal surface. It will likely chip eventually but the metal will be in good shape. Around here we get about 3 -5 years before chipping starts (not exact same application) in the weather.
The high heat paint shown above is good stuff, but did chip badly on the grill I painted when I dented it.
 
From my jetski/snowmobile days dealing with painting galvanized trailers.....best combination i have found is to paint the metal with a self etching primer....then paint with an epoxy enamel with in an hours time of spraying the primer. Home depot sells something called "Appliance epoxy Paint" by rustoleum....only comes in black or white but its tough as nails. If this is on a part that will get heated then i would not use galvanized metals as mentioned by LordUlrich
 
Ya my plan is to light all three burners and let it go for a while to burn off some of the zinc and then paint. Would that work? I was looking at using rustolem engine paint.
 
If at all possible....i would change out the galvanized parts that are exposed to the heat with regular steel...but i guess if you do it in a very well ventilated are and let it heat up very good, i dont see why an engine paint wouldn't be ok on top.......i just don't know if galvanized metals gas off when heated even after the fact of being covered with a high heat paint.....
 
in my limited experience, using a metal etching primer will allow you to paint galvanized with any type of paint that works on steel. i've used rustoleum. you likely dont have to wait to paint, as any metal that will burn off zinc and release toxic fumes will also burn off the paint and release toxic fumes. make sure you put it through a good hour plus burn with the burners on and a kettle of water on it (having no pot there will let the heat escape, pot on the stand traps a bit more heat and stand gets hotter).

I'm looking to do this exact thing, burn off the galvanization from my strut stand and coat the top with barbecue paint. It would be comforting to know if this works or not before I attempt this relatively long process.
