Overshot OG - Correct at Bottling ?

Hello,

Last weekend I brewed my first all-grain batch using the following recipe.

Everything went surprisingly well except for a few errors. My issue is that due to a slightly better efficiency than I was expecting, boiling off 0.5 gallons more than planned and I suspect adding an extra 0.5 lb of corn sugar to the boil (not sure about this will have to check when I get home) I ended up with an OG of 1.062 instead of the target 1.050.

I will be bottling this batch so I am wondering if I could just dissolve the priming sugar in a larger volume of water in order to dilute the beer to an alcohol level more appropriate for a cream ale ?

My quick calculations seem to indicate an addition in the range of 1 gallon to lower the ABV to ~5.25 - 5.5 %. (6.5 - 7 % ABV in 5 gallons to be bottled). This seems like quite a large volume and I would be worried about producing a watery tasting beer.

Any feedback on this matter would be appreciated.
 
It would work and a gallon is about right. Calculate it this way: (62x5)/6 = 52 points, which is right where you were shooting.
