Over ripe fruit flavor and aroma in homemade wine

My first few attempts at making fruit wine has ended up with an ok wine but its got an over ripe fruit flavor and aroma. The fruit was not over ripe when i used it to make the wines. This has been the case with a pineapple wine and a watermelon wine. Ive been using champagne yeast.
What could cause these (off) flavors and aromas?
 
Lots of things can cause off flavors and aromas. Could you share with us your recipe and method? That will help point to the likeliest source of the problem...
 
No sulfite? Untested pH?
Wild microbes can make some delicious ripe fruit aroma.

The wild cider I have fermenting smells like ripe strawberry and kiwi.
