So I'm in Colorado and Buchi has stopped supplying us, so I have decided to start brewing my own kombucha. My goal is simple: recreate Buchi Fire. The ingredients are black tea, apple juice, ginger and cayenne. But I've never brewed before.
Has anybody tried this already, or do you maybe have a good recipe with these ingredients? I'm not sure exactly which type of black tea to start with. Maybe pu'erh or oolong? Any input would be much appreciated.
I've read over all the basics, flavoring and 2nd fermentation in the Big Kombucha Book.
