After looking at alot of oktobfest ales here, there seems to be a trend with only using Hallertau and Tettnanger hops. Would using noble hybrids like magnum and crystal keep this as close to style as an oktoberfest "ale" can be? Or would it taste way off?

I think you'll be fine make substitutions, especially if they are noble-esque. Since the hops are only used for bittering in an oktoberfest, they really don't contribute much flavor to the final beer. Now if you really get into the details, each hop variety has slightly different ratios of different compounds that produce flavors and bitterness, but I doubt it would make much difference in this case.
