I've got a maple nut brown ale planned but i have an issue.
the recipe I want to do is this:
5 lbs Light DME
1 lb Crystal 60L
1 lb Mable Syrup (grade B)
1 lb Victory
.5 lb Chocolate malt
1.25 oz Fuggles (4.5) 60 min
1 oz EK Goldings (5.0) 20 min
1 oz EK Goldings (5.0) 10 min
Wy'east 1272 American Ale 2
this was supposed to be a steeped with extract batch but it seems that the best nut browns all have victory malt in them which needs to be mashed and i don't have the equipment necessary to mash.
would it be possible to just mash the victory in a grain bag at about 153* by getting it up to temp in the kettle and then setting my oven to that temp and putting the kettle in there for about an hour? (i have a pretty nice quality convection oven)
or, since this is only a flavoring grain, could i just steep it with the rest of the grains at about 150ish for 30 min as usual?
i want to make this batch since its a recipe I've been working on for a while, but i don't want to half-ass it. what do you think?
