Northern brewer Hefe & Cream Ale

How important is the multiple temp mash with these two beers?

I have brewed both those styles (albeit not from Northern Brewer) and used a single infusion mash for both. They came out great. I don't think the step mashes are necessary.

yeah, don't worry about step-mashing with either of those. Also, is this the hefe: Bavarian Hefe Weizen All Grain Kit -- Inventory Sheet

If so, the temp raise at the bottom of the page is just a mash-out to stop conversion. Good Luck

Thanks for the replies. Brewed the Hefe tonight, every thing went well but I was a gallon short in the primary. I guess four gallons of good hefe is better than five gallons of BMC.
