I have a 5gal keg of stout that has been under CO2 for about 2 months now and will not be served until March. If I get a nitrogen set up is it to late to serve it with nitrogen? Will it have the same effect, "fall", when it comes out of the stout tap?
 
You will have to de-carb it some. Serving a beer with normal carbonation through a stout faucet will result in a glass of foam. The first time I used my setup I naturally carbonated the beer to normal levels (didn't think I would be able to get my tank so soon) and had to purge it a bunch to get it down to 1.2-1.4 volumes or so.
