so i made a brown ale today... split the batch and did 5 gallons on just S-05.
Made the other half on a combination of things.
a fresh pack of roeselare... a pack of roeselare that expired in jan of 11 and a package of lacto that expired in the same time frame.

the newest one smelled like a sour ale should, but the old roeselare smelled like straight up cherries and vinegar and just the lacto smelled of vinegar, so this should be really interesting!

Bought a corker and 2 cases of belgian bottles along with a case of chamapgne bottles (Champagne in the pic, the 750 belgians aren't) those were test corks.

Question! So I bought an extra thief and I stole a small sample of the our bruin... has a faint taste of cigarette ash, is that normal at all?? I poured the other half of the batch and fermented with s-05 and it tastes leathery and awesome... should I just let it ride for a few more months and try again later?? I don't want this to feel like a waste of time.
 
forget about it for at least another 6 months, the beer is still a baby,dont stress. relax and pop the top on a homebrew.
