New Cider Maker from Victoria

Hello all. I'm a new forum member and a new cider maker. My extended family's apple trees produced over a thousand pounds of apples this year, so cider making was kind of forced upon me. Not complaining, but definitely learning fast.

That's a lot of apples, sauce comes to mind but cider would be better.
