The problem I have is my brew pot is not big enough to handle this brew. Its a Austin home brew supply kit which calls for 2.5 gallons of water and then after steeping specialty grains calls for 10lbs of LME and I believe 2lbs of DME.
I recently brewed a Ruination IPA Clone which was just 10LBS of LME and it was too close to the top for comfort.
What should I do Can I do a 2 Gallon boil and just ad the extra water once my wort is in the primary?
Also I have read talk of not adding the LME and/or DME untill the last 15 minutes of the boil. Can someone please shed some light on this for me.
