I racked my beer today, my FG is great. OG was 48, now FG 15....and still has a couple of weeks left. Only problem is all the setiment still left in the beer. Now that I racked, will that change the clarity of my beer? I use Irish moss in the boil, and use a straner to get most of the hops out after the boil has cold. I can I get more setiment out of my beer??
 
you can use gelatin to fine the beer, there are other additives that will do the same.

best method, IMO, is time and cold. give the beer a little time, and keep it as cold as you can. use an ice-bath:put your carboy/bucket in a bigger tub, and put some ice & water in there. top up the ice every now and then. put the carboy in your shed or unheated garage, if you have one and it's cold where you are.
 
You just racked to secondary.... Just give it more time, if you used Irish moss you'll be fine it has given me some of the clearest beers ever.
 
It's too early for the cold break, it's an ale. Ale yeast stops attenuation if its too cold. After two more weeks in the secondary, I'll give it a cold break, and your right it diffidently clear the beer, kinda like larging!!!!
