Fellas,
Anyone have any links to large batch size, as the brother in law and I now have capacity of two 15 gallon boiling pots and liberally sized sparging containers. Any help would be great as, due to the volume and cost involved, scaling up some good 5 gallon recipes makes us nervous. Thanks - Stable
 
What software would you reccomend? We are looking to make 30 gallons or so to get us through the Northern winter here. Thanks-Stable
 
If you are starting from a recipe that already uses a full boil, then everything scales up uniformly. To go from 5 gallon to 10 gallon, double everything.
 
Unfortunately, when it comes to hops it's not quite so simple. Trouble is, there's no way to really gauge the effect the increased brew length will have on hops utilization. The larger kettle will change the boil dynamic; the intangibles are how much and which way: increase or decrease.

Malt, yeah, that's linear. :)

The only real way to figure out the hops scaling is by brewing beer. Brew a standard recipe and try a linear scaling of the hops schedule. Compare to the standard - the five-gallon batch. If it's close enough that no difference is detected, there won't be much to tweak. Usually, however, you'll be able to tell at a sip whether or not your kettle utilization is off from your five-gallon brew length.

Keep in mind the kettle dynamic not only affects the bittering charge; it also effects flavor additions.

Here's why: With a five-gallon batch, the surface:volume ratio is greater than the larger brew length. The larger batch is usually boiled in a taller kettle, decreasing the surface:volume ratio and changing the motion dynamic within the fluid.
