Need help with a Kentucky Coffee Stout?

Hey guys! My buddies just opened up a coffee shop and we want to incorporate there house blend (darker roast) into a beer. So i was wondering what kind of ideas we could incorporate Kentucky into the beer? Bourbon would be great of course but i was wondering if there were any other local ideas people have dont. We're gonna start with a 5gal batch. Thanks
 
Rather than just adding bourbon, you could soak some oak chips in bourbon and add them in the secondary.

Do you have access to any Kentucky-grown hops? Or when maybe add some mint to the secondary, in homage to the Kentucky Derby and its tradition of mint juleps?
