Hey everyone! (sorry for the lengthly post.. )

[Exec. Summary--- what yeast to use for second 5 gallons of kolsch grain bill?]

We all know that brewing 10 gallons is just as easy as brewing 5 gallons, given the brewing space. I am going to brew a Koelsch for my Chistmas Party, to go along side of my Chocolate Stout. I plan to brew a regular koelsch and maybe add some caramel malt just to give it a little color, and distinguish it as a homebrew.

Using:
German Pilsner malt,
Crystal Malt for color....
2 ounces of Cascade, 1 for 60 min and 1 at flame out...
and Kolsch Yeast.

So, I was wondering, could I make 10 gallons and use 5 gallons with he kolsch yeast... and 5 gallons... using... ?????? What about a Belgian Abbey yeast to give it a fruity characteristic?????

Belgian yeast always sounds good to me, but I personally think the OG needs to be upwards of 1.060 before the Belgian yeasts really start throwing off their nice characteristics.

Any wheat yeast would be nice with a low OG light beer, even if there is no wheat.

Since it will have a little more color to it, you could go in the English session ale direction with S-04, which I'm a big fan of, or London Ale yeast is very good too.
