Project 2 looks clear. Nice rose color. I racked it again last night..... almost no lees on this one.

I back sweetened...add potassium sorbate....and 5 campdin tabs put lid back on and now it sits... was gonna bottel it in 11 days and put in my basement......how long can it sit like this in the carboy before I bottel it?
 
It can sit a long time. If its toped up and airlocked it can sit for years even. Its called bulk aging. Wine is often bulk aged 6-24 months before bottleing.
Write down the current sg. Retake before bottleing to double check that the sorbate worked and it has not refermented. I will often give my wines a month after sorbate/ backsweetning. I don't sweeten often and don't trust it not to referment!!!
