i'm working on getting rid of hops in my freezer right now, so i'm ordering supplies for two recipes where i don't need to buy hops. one is a nut brown i'm pretty confident about, the other an oatmeal stout. the grain bill is somewhat typical for the style, but i'm having trouble deciding on hops. i don't want this beer to have any noticeable hop flavor or aroma, just a nice clean bitterness to compliment a chocolatey, nourishing, warm, and hopefully very smooth grain bill. something around 25 IBUs is what i'm looking for. i had decided on 3/4 oz. of northern brewer pellet hops that i have left over from something (don't remember if it was for my beer or my friends) for 60 minutes. does this hop sound good to any of you for the style? also, i've seen many oat stout recipes that call for lactose, has anyone (i know someone has, just don't remember who) used lactose in their oatmeal stout. was it good or just too much?
 
papazian suggests the following bittering hops for a dry stout

2 oz of one of the following: goldings, fuggles, williamette, cascade
... OR ...
1 oz of one of the following: Norther Brewer, Perle

for a sweet stout, reduce it by 50%
for an export stout, increase it by 50%

I personally used 1oz of Perle in my espresso stout and that seemed a bit low, but I did use high dextrin malt for that brew, so I should have compensated for that with more hops.
