I've got a sour going right now and I just took a sample of it. I really like the flavor, but the aroma is weird. I was planning on dry hopping it with Nelson Sauvin. So the aroma might not matter that much anyway. I don't want it to sit too much longer, because the flavor is pretty great right now. I'm worried about waiting till the aroma is right on, and then the flavor changing into something else. What do you think?

It kinda hard to say without knowing the microbes you used, recipe, time of fermentation, or exactly what is weird about the aroma. Are you gonna bottle and cellar it?

I think a lot of Brett beers could be described as smelling a bit weird. That is to be expected to some extent.

I personnaly wouldn't bottle one I considered to be both weird and off-putting. I would take my chances that further age would improve it.

I think I'm just being impatient. I'll go ahead and wait a bit longer. The smell is kinda like per, but not cat pee. More like a dehydrated yellow pee. Gross I know. It's actually faded a bit from a couple weeks ago. I just need to chill I think.

Yeah, this is actually still really young, like months old. But I was just sampling it to see where it was at, and the flavor is great, just weird pee smell. I enjoy making sours, but sometimes the wait is tough.
