So, I brewed an IPA the other day with biab. I used my usual grain bill with a touch of white wheat to get a trillium color to the beer.

While we were transferring it to the carboy I started to notice that the wort started to separate. It quickly went from a hazy yellow color to a dark redish color. There is an abnormal amount trub at the bottom of the carboy about gallon worth.
I've never had this happen before in any of my brews before. I was wondering if anyone ever experienced this before. I cant imagine it was the hop shot we used that would cause the wort to fall apart. If anyone has any suggestions would be greatly appreciated!
 
Happens to me all the time, especially if I use pellet hops. Chances are it will compact a little bit as the beer ferments.
 
Right after I transfer the wort always looks....unappetizing as there's all this stuff floating in it. Hot break, cold break, hops--yucky looking stuff. Over a couple hours of time that stuff settles out. Then, when the yeast kicks in, it's all mixed into the wort. When the yeast finally stops doing its thing, it all settles to the bottom and compacts.
 
Stratification of the wort is relatively common and nothing to worry about. Sometimes right after transfer there appears to be a lot of trub. Often it is a very loose mixture of proteins, gunk etc. That will compact nicely after the yeast have finished their job.
