All I have to say is OMG. I started my first batch on June 3rd and tapped the keg today. This stuff is fantastic! I don't want to have a dedicated keg for it, but may start more batches and bottle them!
 
I just started an apfelwein yesterday, its doing its thing now and I plan to keg it in a month then bottle it. Edworts recipe says a month for primary, did you keg it and let it sit for the other 5 months?

No. I had it in a 5 gallon glass carboy and just aged it in there for 6 months. I didnt worry about racking off the yeast or anything. Turned out fine

Get another batch going soon..It goes fast..:drunk:

Yeah, I am planning on it. I think I will bottle it tho, so I can keep kegs free
 
Sit for 5 months???Man, That's a long time. I keep it in the primary for a month. Keg it and start drinking it a week later.
 
i now have a pretty decent pipeline and feel that I can brew something like an apfelwein and not be so tempted to drink it very prematurely. I will need to throw one together... the only thing is that I have 10 gallons now of cider i brewed that I need to consume. I am not a huge cider person so drinking them may take a while, but that is probably a good thing as they will age properly lol
 
I'm drinking a pint of my kitchen sink apfelwein/graff right now: 4 gallon ralphs brand apple juice, 1.5 lb honey, .5 lb crystal malt, 1 lb extra light DME, and 3 sprigs of fresh rosemary. Damn fine for drinking, even better for braising pork.
 
it really does get better with age. i've got 2 batches going now that i plan to keep in primary for 6 months, then keg and leave them alone for another 6 months. should be awesome by next summer :)

after the 2 batches are kegged, i'm going to start 2 more and already have the juice and yeast waiting to go.
 
Last time I made it I let it sit for a few months as well. It improves with age in my opinion.

Yep, everything I read said that it gets better with age, 6 months it really gets good and at 8 months is awesome. I made it in June, knowing I would wait until now to have it ready for christmas. Sadly, I did not start another batch in between :(. I really need to setup a pipeline and bottle it, so I always have some on hand

My graff turned out well......a good drink, particularly for the warm weather. The apfelwein was certainly easy and inexpensive, but even after almost six months in the bottle, it tastes like a thin white wine (and white wine isn't to my taste, generally) with just a bare hint of apples. The graff I'll make again; the apfelwein....probably not, unless I try EW's recipe, juts to give itanother chance.
