We need to know what kind of beer it is..... How many gallons and your OG and FG readings. My first thought is oxidized beer, or exceeding the amount of fermentable sugars, i.e; too much priming sugar for carbonating your bottles (how much did you use, in what size bottle?
 
If your priming sugar is the correct ratio, will it matter what size bottles you put it in? Given using sugar to prime, and not tablets
 
Knowing the recipe would help too. IF there was a lot of simple sugars, like table sugar, in the recipe it would tend to give a cidery/winey taste.
