This will be number 15 of solo brews ( if you dont count 1 gallon batches)
yet it will be my 10th sour.

Carpe Morus
Boil Time: 60 min
Batch Size: 10 gallons (fermentor volume)
Boil Size: 12.5 gallons
Boil Gravity: 1.039
Efficiency: 75% (brew house)


STATS:
Original Gravity: 1.049
Final Gravity: 1.002( im expecting 1.00 w/ my house strain)
ABV6.11%
IBU 12.26
SRM 3.99

FERMENTABLES:
11.5 lb - American - Pale 2-Row (61.4%)
3.5 lb - American - White Wheat (18.7%)
3 lb - Mulberry (9.9%)
8.25 oz - Flaked Corn (2.7%)
8.25 oz - Flaked Wheat (2.7%)
6 oz - American - Aromatic Malt (2%)
4 oz - Belgian - Caramel Pils (1.3%)
4 oz - Dry Malt Extract - Wheat (1.3%)

HOPS:
21 g - Styrian Goldings, 50 min, IBU: 8.11
7 g - Domestic Hallertau, 20 min,
7 g - Styrian Goldings, 20 min,
21 g - Domestic Hallertau, 5 min,
OTHER INGREDIENTS:
3 grams a gallon used - bee pollen. optional up to 7 grams a gallon , Time: 10 min, Use: flavor/water agent/ yeast nutrient.

YEAST: trube collected from last sour consisting of
Bootleg Biology - chardonnay+ funk weapon#1 +saison parfait+ cantillon dregs+ american solara dregs

btw this is also my first 100% free beer. I got all the grain and hops from work. I collected the mulberries myself and the yeast is a house culture i have been growing and saving.
 
Congrats on #15!

You should be getting pretty tuned in to your equipment and process by now. I know you're brewing what you like and that's always the best approach.

That being said, don't ignore the many great types of beer that are out there. Variety is the brew of life!
 
cool man thanks.I work at a brewery so i can get all the ipa/pilsners/porters/stouts/kolsches that i can ever drink for free or next to nothing.That is the reason i really only brew sours. Its the reason i started brewing in the first place.
number 15 (carpe morus) is bubbling away.
i did a 3 gallon batch with ripe white mulberries to have a nice blonde fruited sour.And 7 gallons got purple mulberries so its the color of wine.
anyone have any comments on the recipe? would you guys have added more or less of anything? omitted anything i added?
