My wife bought be a 5 gallon setup for Christmas, so I can finally step up from the Mr. Beer fermenter. The LHBS tossed in a Munton's Dockland Porter extract kit.

I don't really want to do a straight HME kit, but I don't want it to go to waste either. I was thinking of steeping a couple pounds of peated malt and doing a 1 hour boil, adding the cans of HME at the end. Does this sound like it will work? Are two pounds enough for a 5 gallon batch, or should I use more?

Also, does any one know how "hoppy" the extract kit is? I planned on tossing in some extra hops; 1/2oz. of Centennial @ 60, 1/2oz. Cascade @ 30. Is that going to put me over the top? I want to end between 40-50 IBU's.

It's been years since I used a hopped LME kit but I alwasy found them low on the hops scale.

A late exract addition should keep iny flavoring aspects if tehre are any. 2lbs of peated malt should be fine.

As for IBU's. hard to say. I was going to enter those hops into beersmith and see what that would equate to if it was just regular LME but I just trealized I haven't put beersmith on this new machine yet.

I have a feeling you would be close iwth that amount but that's an educated guess. Centenial is what 11%AA or so right?
 
The Centennial I have is rated at 9.0%.

Using Tastybrew, I get 26 IBU's from the hops. If a late HME addition gets me somewhere between 15-25 more, I'll be about where I want to.

I don't know. Does the kit state what the IBU's should be. I found those kits to be on the low end of the styles hops. I'd cut the diff and use 3/4oz of cent.
