I have been wanting to make a Pumpkin Spice type beer. I've looked around at all sorts of scratch recipes but not sure I want to try making a scratch beer quite yet. Then a thought came to my head... Could I just modify a beer kit to get an approximate simulation?

I'm fairly ignorant to the matter, maybe people modify kits on a regular basis. I have a Coopers Dark Ale, and a Stout kit that might make decent candidates.

How would the process work? Boil some spices and add it to the wort?

I'd suggest Northern Brewer smashing pumpkin ale or you can always do your own all grain and add nutmeg, cinnamon and ginger right at the end of the boil
