OK so I put 2 oz of mint in jar with 11oz of vodka for the past few weeks. I'm currently making 1 gallon batches. I have a porter and I wanted to add the mint extract. If I throw in the whole jar of vodka (and mint leaves?) Will this be way too minty. On a side note I'm also adding cocoa nibs soaked in vodka for the past few days in.
 
I recently added orange blossom extract directly to my vessel before immediately before bottling.

In order to figure out the volume, a couple of days earlier I pulled a small sample (100mL or less), and using a syringe (can be bought at local chemists cheaply) added 1mL to a 30mL sample at a time until I felt the flavour was right.

I then calculated that over the volume of beer I had, and backed off a little to be safe, so then I knew how much to add.

This approach ought to work with any addition where you're unsure of the potency.

(In case you're interested, it was an orange blossom rye saison)
 
I would advise you to drink the extract before you add it. I made a mint extract similar to how you did, soaking a few oz of mint leaves in vodka for a month, and it tasted nasty.

I thought it might taste better once blended with a small stout I made so I added some to a few bottles. Nope. The flavor was not what I'd call minty.
 
Your right fathand I tasted a bit of the mint extract and it was awful not minty. This was a jar full of mint and vodka for approx 5 weeks. The mint at the top of the jar had browned in color so maybe it had something to do with the oxygeniation of being in the vodka for so long. I think I'm gonna try it again but only leave the mint in for 2 weeks. Does anyone have experience dry hopping with mint. I wonder if it has a similar reaction
 
Jus incase your wondering I split a 2 gallon porter into two primary 1 gallon fermenters one with bourbon soaked oak chips. The other was supposed to be with with cocoa nibs and mint extract but ended up being just being cocoa nibs
