So I have the brewers best milk stout kit but I would like to add Cocoa to it to make it a chocolate milk stout anybody have thoughts on this?

Use 4 oz dutched process cocoa powder last 10 min of boil, soak 4 oz cocoa nibs in enough Cruzan Black Strap Rum to cover during fermentation, add to secondary for 4 weeks. I also add a few oz of coffee beans to give it a little extra, something like a mocha.

Sir I thank you! I will do this in my brew and look forward to tasting it. Unfortunately I could only find Hershey's cocoa as I live in the Hershey area. But I'm hoping that doesn't matter.

I have used Hershey's cocoa powder in the last few minutes of the boil. All I can say is that the smell during krausen was amazing. Unfortunately the flavor didn't stick, so nibs are certainly a good idea as well. I'm not big on coffee myself, so I'd avoid that, but to each their own.

I am about to do a split batch experiment using a oatmeal cream stout as a base. 1 gallon will be bottled right away, 1 gallon will go into secondary with a vanilla bean, and 1 gallon will go into secondary with cocoa nibs and raspberries.

Vanilla beans, orange zest are also very acceptable adjuncts for secondary. Chocolate and strawberry, raspberry, go together nicely. Think of the things that go with chocolate deserts and you might come up with something good. Nice thing about homebrew, you can experiment with different flavors.

Yes that is my favorite part of home brewing. Depending on how this beer turns out I am going probably throw some raspberries in to secondary the next time I make it.

Thanks for your input on this guys. The stout has been bottled this past week. Did a taste test of the flat beer and it tasted great! Looking forward to having a glass of it when it is done bottle conditioning. Might take one case of it and let it condition longer.

Taste one bottle now, but put the rest away and let it mature for 6-8 months. It will get better, and the flavors will be a bit more pronounced.

That's not a bad idea. I would try one today but I think my job would frown upon cracking a beer at work.
