I'm sure this question has been answered but why can't you use milk chocolate in beer. I see a ton of posts about unsweetened powder or cacao nibs but never some melted ghardelli chocolate
 
I'm not positive but I'm going to guess that the fat in it would kill the head retention.
 
One word: fat.

But you can use ghardelli 100% cacao melted for sure. If you are looking for the sweetness and mouthfeel, use a little lactose sugar. Its not fermentable so the sweetness lingers and it leaves creamy mouthfeel.
 
You can use it. Problem is getting the oils out of the fermenter.
