Here is an interesting article that I just found about beers.
Beer gets boost with microbrew view.
Here is the overview of the article. A group used a new technique to find out what the different proteins are that are still present in beer. With a sampled beer they found 54 different proteins (4x the amount previously found). This info can help refine flavors by knowing what is still going into the beer as well as potentially help to tell what goes into the beer. For example finding wheat proteins if it is not really a wheat beer.
